    Smoked Bacon w/QVid!

I use Pop's brine from here on the forum. Use the search for it . If you can't find it I'll dig out the reference and post it again. I got to take the dog to the vet for a follow up check on his eye. GeneK

    Smoked Bacon w/QVid!

Nice video. I usually wet brine and make Canadian bacon for less fat. (comes with getting older etc.) I like that we all have our different steps to some great tasting food!  Keep smoking. GeneK

Propane temp control with a GE WB20K10013 oven temp control

I have no experience with that particular controller, but most systems I have worked with the only difference is the size of the orifice in the burner. Many appliances have had both orifices and you then just trim the air control for proper flame. You can always check with an appliance...

    using pork chops for sausage

It works great, like you said it may need more fat. I sometimes use salt pork if I don't have enough fat put aside from other projects. GeneK

    Where there's smoke there's (shouldn't be) fire

Ron, get an Amazen tube smoker from Todd Johnston. I use a 12 inch in my small propane smoker and love it. Put the tube on a lower rack and smoke away. Todd has 6 inch to 18 inch models and if you call or e-mail him he'll be able to tell you just which of his models will work best. Search on...

    PID

Fizz, I have not used that particular brand PID but have worked with many other brands. They in general are effective, Proper sensor placement and programming they work very well. In smoking there are many variables and temp control is just one. Air circulation, smoke circulation and a lot of...

Mes that shocked me and my wife!!!

Linton, first I don't have an MES. I had an old Brinkman bullet type electric. But coming from a few years in electronics, if the circuit the MES was plugged into is wired correctly you should not get shocked. The safety ground and neutral combined with the circuit breaker should have resolved...

    Ham for pulled pork???

dabeeler, to me ham is already cured and is ham not 'pork'. Also is there enough fat left to really baste the meat if you take it to pulling temperatures? I would be afraid of getting something dry and not palatable. My vote is to slice it and enjoy the ham. GeneK

Cubanos from "SQWIBS Triple Play" Post

SQWIB, those are some good looking Cubanos. I make up a similar one using my Canadian bacon in stead of the ham. I don't get to make as many at a time since my wife is always on a strict diet and won't eat anything she doesn't have the exact calorie count. GeneK

    new member...new smoker build...

Not sure what it will look like when done, But an interesting start. I usually start with a commercial unit and then 'bash' it into what I am thinking of at the time. Currently I'm adding a PID controlled gas system to a small Char Broil offset smoker. I'll look forward to seeing your...

collagen vs. cellulose. your opinion please

I like the cellulose over the collagen, the collagen seem too tough for my personal tastes. That said, it does come down to what you are used to. I do like the natural casings but they tend to be out of my budget and I have a lot of the cellulose on hand. GeneK

    pid controller problem

Smoking, on that mypin controller I would just check the wiring and step through the program and see if anything has changed. Usually there's a light on the front panel the turns on when the output  is enabled. Also on the SSR there's a similar light, they should be in sync if the SSR is always...

    pid controller problem

Smoking, Morning to you. Had to get a Greek loaf of bread set up to bake later today. There is a setting that displays as Lbd labeled dead band, which is what engineering types call what you are asking for. Try setting that to half the span you want and see what happens. At Electro Scientific...

    pid controller problem

Smoking, that is the term we're interested in changing. I found at least two different data sheets on the C-100 and the extra things they say on that line is just covering the bases for the engineering types who may be doing who know what. Yeah I can pick on engineers, I'm a retired EE) if you...

    Smoker controls

Oatman, I have used the SYL-1512A from Aubers and the JLD612 from Amazon with good results for each of them. I have a small 3300 watt heat gun I put in the oven of our stove so my wife can make large batch of yogurt each month. That uses the JLD612 because it has a double display to show the set...

    pid controller problem

Smoking, do you have the setup sheet for the C-100?  If you do, there is a term near the bottom of the chart that says CYCLE  or Heating CYCLE. That is the setting for the cycle length, it has a symbol that looks like a backwards 7. Sorry I can't figure how to send the symbols from a seven...

    pid controller problem

Hi Smokingbk, can you tell me which PID you have. If I have the spec sheet or can get it I can probably help you get it going. I have used a lot of the PID's befoer I retired and for sous vide since. There is a term for how long the cycle period is and what portion of the cycle will be on. GeneK
