I recently looked into all of this down here in Florida... What I have found out, so far, is that the requirements can vary from county to county and I was also surprised at how many people, whom you would think "Should Know" ... Didn't have a clue and some were unable to answer questions at...
Just my $.02 ... but you aren't really talking about that much of a difference. Go with the bigger one. Better to have the space and not need it than to need alittle extra and not have it... Good luck! and welcome!!
The maze is a good idea! I like it and feel like it has a purpose. I feel like it makes better use and can sorta regulate the smoke alittle better than just an open box.... But it is a personal preference. Seems like you use less and have the option of lighting the other end to get more smoke if...
Looks like you are off to a good start.... I don't trim a butt (or shoulder). And I don't leave it in a pan to smoke. I'm not, at all, saying either are right or wrong. Honestly pulled pork is pretty hard to mess up! haha I believe you will love the results!
Being from Kentucky, we use hickory and oak. Both are strong flavors, but make for some great BBQ once you get used to using them. I live in Florida now and use primarily pecan. Just like oak and hickory, pecan has good flavor, but after being used to hickory and oak I had to get used to it.
