Happy Thanksgiving to all and their families. Its been a busy morning, the first turkey on the smoker was for a CO-Worker of my wife. When I did my test turkey 2 weeks ago, they liked it enough and requested me to do one for them. My wife didn't look like it was a request when she mentioned...

Then note the key part of leaving it in the fridge uncovered...

Dry Brine and Injection - Turkey

It wouldn't break my heart to get a big mouthful of garlic butter.. Heck I would just toss in an extra piece of turkey. However, point well made and I myself will have to watch that, for the co-worker I am doing one for wouldn't like that I am sure.

Just Bought a Masterbuilt Model 20051214, Propane Smoker from Sam's

The stock thermometer could be the issue. I notice in your signature you have a Maverick ET-732, have you used it inside the MES to see if the temps are different than the stock one reads?

    Sunday Ribs 2 Ways w/QView

Great looking ribs. I may have to try that "Rub Some Butt" I like a change in taste now and then, and some Carolina flavor sounds good.

    Bacon butter turkey practice turkey

Yeah, I had a small issue on the skin as well. I am doing one for some work friends, and I may have to pull it a tad early and toss it in the over at 425° to get that crispy skin. Owed point I mentioned given. You look to be on great rack for TG-day.
