It's looking like I need to do a grate temp. I pulled off the chunk to the side of the bone that probed like butter after 21 hours but the rest of it went for a total of 23 hours. Overall the flavor was great so that's a win
Tri tip is all we get around here in S. California. Out here BBQ means tri tip. Briskets rare around here.

You're gonna love it. I got mine 2 weeks ago and haven't stopped smoking since. Well except for a at 2-day period where it was supposed to rain. The storm of the century never came and I could have been smoking the whole time. Got a butt on right now since last night.
