How to take a conference call you dont want to be on

Certainly this can't be that rare. I work from home most days, and there are always 2-3 conference calls *per day*. I often am building a fire, loading a smoker, mixing sausage, whatever during them. Bluetooth is a great thing!

Remember your first attempt at smoking?

It was almost 30 years ago, but I can remember it like it was last weekend (of course my memory is so shot I can't remember last weekend!). I had been givena small stickburner offset and had only been using it as a grill, so I decided to try the smoking thing. I got a big ol' brisket, and...

    Question on my new MES

Go to Sears or an appliance store and get a HD extension cord for a fridge or the like. They are usually 10-12 gauge wire and only 3-6 feet long, so there's no mess.

    First car.....

    1. 1969 VW Beetle - the start of a long air-cooled love affair 2. 1972 Buick Electra 225 Limited - about 50 feet long and fun to parallel park. The carb had secondaries the size of oil cans, and it would haul ass faster than the gas needle was falling.

    Democrats for Guns!

I'd sure hope there's more to the process than what's outlined in the article. In Texas there is required class time and having to qualify at the range. I'd also think that understanding the applicable state and Constitutional provisions might be good in helping to prevent being sued.

    First hot-fast brisket - amazing!

Wow, thanks for the great comments. To answer some questions - no, I didn't inject it with anything. Yes, I trimmed just about all of the fat cap off, as well as the layer between the point and flat. It really worked out well, because the point and flat are very different pieces of meat, so I...

    Outdoor Kitchen with Grill, Smoker?

Sounds like a great use for that old line. Be awayre, however, that a propane grill is not going to work on natural gas - the densities and BTUs are very different. I know there are some designed to work on natural gas, but they are much fewer and further between that the propane ones. Some...

    Porked Smokeloins

Porked SmokeLoins Another BBQ treat for those of you who want a good, fast, tasty meal from your smoker. They can be grilled as well, but won't have the great smoky flavor. Ingredients: 2 pork tenderloins, each around a pound 8 slices of regular bacon BBQ rub mixture, your own or store bought...

    Pomegranate Glaze/Sauce

Here is a terrific glaze for chicken and pork. Using the base of pomegranate juice makes for a tasty but hard-to-identify flavor that makes you want more. This recipe is easily doubled for more glaze/sauce. See note at the end of the recipe about the listed hot sauce. For use as a glaze, double...

    First hot-fast brisket - amazing!

I just finished my first hot & fast CAB choice brisket today on the WSM 22 at about 300 degrees. It was an eye-opening experience (thanks, Konrad!). One thing I tried which was a bit of extra work was to separate the point and flat and trim of all the excess fat. These I panned separately. I...

How long is too long to cure?

Have to agree. The danger in over-curing comes from using too much cure, not too much time.

anybody ever just s&p ribs as a rub?

...or turn them into ham! I've tried several commercial rubs and a couple of homemade ones, but I always come back to the simple. I wash the cryo-funk off the ribs, trim them, then dry them well with paper towels. Next they get a wash of Worcestershire, salt and pepper, and go in the smoker...
