Smoked Chimkin (as my wife and sister in law call it)

Looks real good. I typically do chicken in a pan with little pats of butter placed throughout.

    CHILI (BUT NOT CHILI)

That's my kind of chili, dang that looks good! Growing up I always thought chili had beans in it, until I learned that's not real chili... some folks get touchy about that, but it's still chili to me. I'm going to have to try this one. 👍

    Corn anyone?

Quarter mile?!?! Guess he didn't realize Ray Kinsella used a tractor to build his baseball field.

Speaking of blowing smoke around the smoker.

I really hope my work goes permanent remote. Right now we are on it through the end of the year. If they give the option next year, I'm taking it and leaving this state. I'm with you on the fires, constant power outages, high cost of living, high crime, constant traffic, homelessness, etc. It'...

    Bacon

Depends on the weight and what you are using. There are others on here that know exact science, but typically 1.5 - 2tsp of prague #1 per 5lbs of pork belly in a dry cure. If you are using something else, I'm not sure. I think some of it comes down to preference and time, which can adjust the...

    Fires In Oregon

Looks pretty nasty. I think the whole west coast is on fire. Maybe we could all just hang the meats outside and let these fires and all this smoke do their thing... save us on fuel and work!

    Skies around Omak.

Stay safe up there. In my two experiences of evacuating literally two years apart, it's best to just leave even when it is only a voluntary evacuation.

    Sky from Fires in California

As long as it clears by early November in time for quack season in the greater sac valley. Lost my quail spots for a few years to come.

    Sky from Fires in California

The LNU Complex here is the 2nd largest in state history last I read. Im sure you CA folks saw it on the news, it was about getting people out and not fighting the fire the night of 8/18, early morning 8/19. They sure as heck made us get out at 2:30am. My relatives joked the only thing standing...

    Sky from Fires in California

Couple of weeks ago it was 900ft from the front door... 😵 Luckily our house still stands, but not all. Quasi smoke with burnt hills in first picture about a week and a half ago. Second from today, that's not cloud cover, that's all smoke.

End Of Summer Storm Halts Outdoor Cooking...

The low here today is 84° F, that was at 6:00am, never cooled off last night. High of 99 later today, but better than the 115 and 111 on Sunday and yesterday.

Smoked turkey breast with a twist.

I remember that episode, and have always wanted to try the stuffing waffles. Looks really good!

Cleaning the offset smoker after use

I let the pit season. I clean off the cooking grates after every cook with a benzomatic weed torch and scrubber. After a few uses I'll hit the grates with some water after torching then torch again. But the whole unit I'll clean every 18 months outside of standard wipping down of ash and soot...

Easy way to wrap meat - foil or paper

That's pretty much how I do it, super easy and no mess 👍. Those pans are "cheap" in bulk at Costco compared to a regular grocery store, I always make sure to have a good supply on hand.

    Air flow issues

You'll need the grate or basket to get proper airflow. Also, warming your split on top of the firebox will help with quick combustion and a clean burn. When you add your split keep the door open a bit wider until the split ignites, and then close the door to cracked or whatever your preferred...
