Trying a pig neck for first go

Gotta run to the market to grab a couple sesame rolls first, but it ain't too bad straight off the cutting board either.  lol I would have let it go longer but the wood was done giving up its essence and I didn't feel like dashing around to toss in another stick and the chips are hard to find...

Trying a pig neck for first go

Well son of my GUN!!! I downloaded the before and after pics and can't find where they went on my puter now.  And of course I hit "delete after importing". Anywho...The neck came out pretty good.   My cooker refused to go higher than 200F though.  When I turned up the flame all I got was more...

Trying a pig neck for first go

Well I fired up the rig about 1.5 hours ago and slowly working the cooker up to 240ish (its at about 205ish atm).  I have TBS in da haus and the vent hood is doing a fine job of pulling most of it out before the house gets smoked out.

Trying a pig neck for first go

Like John 1916 this will be my maiden voyage in smoking.  My butcher shop didn't have any shoulders so I went with 2 kg (~5 lbs) of neck meat.  I know neck may not be the best choice, but it tends to be juicy.  My main concern is the butcher had already trimmed the fat off. I just returned from...

Need a Bulls Eye copycat recipe

Well, it's been awhile since I added anything here. I tried a recipe similar to what Michael posted almost a cross between his and the #1 recipe in the link that Sprky posted.  What I have now is very close and I only need a slight tweak I think to nail it. 2 C catsup 1 med onion minced 1/2...

Ooooh, those pics are pure food porn my friend. My wife and I are coming to the USA for vacation in July and I'm going to put in an order soon so we'll have an Amazin smoker and sawdust waiting for me when we arrive. My evil plan is to bring the smoker box and some sawdust back to Ukraine with...

    Looking for a sauce recipe

Maybe this one? http://www.worldcook.net/Cooking/Sauce/SAUCE-CreamyTomatoDip.htm There's two sauces there, the other one is a copy cat honey pepper sauce from Applebees.

I actually tried #2 and its the one that all I can taste is the Worcestershire.  #1 looks pretty close to Michael's recipe.

Need a Bulls Eye copycat recipe

Like that Brat commercial says, any recipe that starts with "open a beer" has to be worth a try.

    Ready to eat Bacon.

It's basically smoked salo then.   Salo is basically raw pork belly and nearly all fat.  It makes me gag just watching my friends slurp it down.  Add the smoke though and you got the best thing to chase a shot of vodka, you ever tasted, except for maybe the homemade dill pickles.   A friend of...

Need a Bulls Eye copycat recipe

Not sure if I can find it.  I just had a flash of brilliance and ran "molasses" through my web translator so I can try asking for "Patoka" But first I hafta clean the sticky mess in my translator.   Wifey doesn't think it's available in stores, but says it IS used to make sweets.  But then I...

Need a Bulls Eye copycat recipe

Thank You Michael! No Brn Sugar to be had here, so I'll sub with some honey and see how it goes. And of course add a T of Liquid Smoke. The sauce I made last week had way more honey and Worcestershire in it and it was of course too sweet and all I could taste was the Worcestershire. Thanks...

Need a Bulls Eye copycat recipe

I know, it's maybe not for the purists here, but I love the taste of the Original Bullseye BBQ sauce.  Problem is I can only carry a couple bottles of it back to Ukraine with me each trip.  Plus the bags of popping corn, Franks Redhot, etc. the baggage weight gets out of control pretty quick and...

    Toss the brisket?

If you didn't start feeling bad at around the 4 hour mark after eating, you're home free.  It's some time later that "reverse flowing" would start. My new life motto is, Never buy street food in Ukraine, those babushkas will kill you and never lose a wink of sleep over it.
