    2 stage butt

Well I mentioned in another thread that I was planning a 2 stage smoke today and it's in the STS getting happy as I type. The plan: With the limitations I have with my little Stove Top Smoker (STS) I can only get to about 212* and unless I wrestle the two sections apart (this is a converted 2...

    Mild Pork Butt Rub

JJ, that's close to what I just tossed in the STS on a 2.5 kg boneless butt. I used about; 1/2 C sugar 1/8 C fine ground coffee (it was a whim and I've seen it done here by others) maybe a Tbs each of garlic powder, cumin and coriandor 1 tsp black pepper 1/2 tsp red pepper flakes All I...

Smoking a Pork Shoulder Saturday to pull on Sunday?

THIS!   Thanks JJ!  This is almost exactly what I'm planning to do today and tomorrow.  My little STS (Stove Top Smoker) will only give me 4-5 hours of smoke at ~212* so I plan to smoke a 4-5# butt today and then finish to PP perfection in the oven tomorrow to feed a 2 man crew who will be...

Protection under the chimney and grill/smoker is mandatory!

Sounds like some alum flashing (or some type of sheet metal) would have saved the deck. Be safe.

    First Build

Welcome Luke. I take it you basically have a metal box now as the insulation was between the inner plastic liner and the outer shell. If looks aren't a major concern, just wrap that baby with fiberglass bat insulation to keep the heat in.  Otherwise, take a stroll through Lowes or HD and find...

    Combo Apartment friendly Smoker

Well its been almost a year since I slid by this thread. I did give up on the hot plate idea as I haven't bothered to look for a better one.  I'm using the gas range since SWMBO is away for a couple months. I have done 2 good smokes in it this month and one that didn't pan out. I did my pig...

    Another good smoke!

Already smoked and half gone.  I couldn't get the right cooking temps to do a L & S cook for PP though.  So I ended up with a smoked roast I guess you could call it.

    God is Good........

Yes He IS good! Nice group save there.  Good job getting the ball rolling. My "nephew" choked on some bread when he was about 2.  I was right there with him and saw it start.  It would have been scary except I was an ARC CPR instructor at the time so the training just took over.  It was all...

    250 Gallon BBQ/Smoker Underway

I'm not a builder (yet), but DO pay attention to your trailer balance before you bolt that smoker down.  You need a couple hundred lbs of tongue weight so the trailer doesn't fishtail on you and drag you into a ditch somewhere.  I don't know the exact numbers there, but I'm sure our trailer...

tired of pellets, what charcoal grill?

I'm kinda partial to the Char Broil grills. I had a Sante Fe model that I left behind when I moved back to Maine from CT.  I got a CB 30" in Maine and have enjoyed grilling on that very much.  Easy hand crank height adj. for the charcoal tray, easy clean out door, cast iron cooking grates (3 of...

    First Time Breakfast Sauage Maker

Here's my favorite casing to use.   Comes pre-stuffed and the flavor is always spot on.  The casing's a bit chewy though so I just slice it open and cook the meat up for gravy and cornbread.

    Another good smoke!

My little Ukrainian steamer pot turned stove top smoker strikes again! Today is Ukraine's version of Memorial Day (Victory Day) and they are celebrating much the same as folks in the US will in just a few short weeks.  Parades, BBQ and beer. I mixed a lb each of ground pork and beef and added...

Trying a pig neck for first go

Well now.  If this is the worst Q I ever cook I can die a happy man. Tonight's supper.  A pile of Q topped with homemade slaw on a sesame seed kaiser roll with a homemade dill pickle on the side.  Washed down with a nice Ukrainian Brewski.  Does it NEED to get any better than this? The rub...
