    Brisket in my MES

    I’ve always rubbed with molasses and used Jeff’s Texas style rub. cut 1 to 2” off of the flat and put in my 30” mes. Set at 250 and smoke with mesquite or mesquite/oak till probe tender. Always turns out great! I have only wrapped once when I was in a pinch.

    Pork is at 190 so throwing in the fatty now. Did it jalapeño popper style with sausage cream cheese, bacon bits, mozzarella and a bit of shredded cheddar. We shall see how this turns out.

    For sure, since I had it I’ve had the opposite problem with the AMNPS burning up quick. I move my smoker from my normal place and later today I moved back similar to how I had it. Don’t know if the airflow had anything to do with it, so who knows?

    Tha is for all your tips! I’ll start with not filling full with pellets and go from there. I am unsure if I have trouble with heat balance. I also almost always have a disposable foil pan on the bottom for easier cleanup.

    Ok everyone here are he finished pics, sorry it took so long but the brisket was phenomenal and melted in everyone’s mouth. We also had chuck roast burnt ends, twice baked potatoes, bacon + jalapeño corn bread, dutches beans, cole slaw, peach and apple jalapeño bbq sauce.

    Actully when i filled it with more pellets i added to the right side where it was red hot with smoldering pellets. So this pic was after I filled it and the smoke was an hour or two from being done. Only got about 7hrs smoke I am guessing since it was placed closer to the heating element.
