    Beef Ribs

    With beef ribs, I find simple is better - just salt, pepper, and oak wood with a touch of mesquite thrown in. Cook at 300 for about six hours, until probe tender. Wrap in peach paper and rest for 1-2 hours, rolled up in a welding blanket, or placed in an ice chest.

    Mustard? My grandma would make you go outside and cut your own switch. JK. Lille's is really good stuff. This tangy, mustard-based sauce is a true South Carolina barbeque sauce. It’s a perfect match for chicken or pork. I love their red sauces as well.

    I see Lone Star Grillz advertising small wood chips to mix with pellets for their grills. They have a disclaimer saying they don't know how they work with other grills. I don't think Lone Star has a monopoly on auger technology. Has anyone out there tried these oak wood chips?

    My only advice - it is easy to oversmoke. Taste periodically.
