    I like oak myself, but I'm a Texas boy.. Grew up in the Texas Hill Country. That's all we had oak trees and more oak trees.. lol I smoked a butt a few days ago and used oak & it came out great.. Phil

    I did do that a ways back. I bought a LEM meat grinder. Extra grinding plates & sausage tubes also. My first attempts at sausage making were not that bad. It's just a pain in the neck trying to stuff the casings with the meat grinder. I need to get a sausage press. I'll probably pick up the 5...

    Thanks Disco and Bear.. I do like smoked sausage. All kinds. That is one of the things I dearly miss since I moved away from the Hill Country in Texas. But it sure was yummy..

    You're right. You are in the stall. Keep your temp in the smoker up & you'll be fine. It can stay at that internal temp for a long time or it may creep up very slowly. You will know it when you leave the stall.. Phil P.S. It is looking great so far..
