    It is 40 deg F here now. Took an hour to get the MES UP TO 255 deg F. Just getting the birds in dropped the temp to 219 deg F. Not sure how long this smoke will take. I've never smoked in the cooler temps. Wish I had some cheese to smoke, after the turkey of course. I'm in it for the long haul now.

    I want to try making gyro meat doing a reverse sear. I'll use Alton Brown's recipe but I'm thinking of mixing the lamb with ground turkey. If lamb is too pricey it may be ground beef & turkey.     I did 50/50 with hickory but mixed all together rather than layering the cherry on top. It is going great now. I saw someone else suggested putting a soup can over the air outlet and I thought I would. I snipped the ends off of an old beer can, didn't have a soup can, and sat it on there. WOW...

    Had to tinker with the AMNPS to get it going. Emptied the drip pan and removed the chip tray altogether. Chip hopper is slightly open. I swear I will NOT open that door again!
