I had this happen to me once on my Pit Barrel Smoker - cooked too fast because I didn't have the lid down tight so the temps went up. I suspect your ribs did the same.
There is a KC Joes right off 119th and I35 - just go east and turn right just past the first shopping center. Another great choice is Jack's Stack but not as close. It is at 95th and Metcalf - about 15 mins east of I35.
