I would recommend a heavy duty grate cut to fit a few inches above the bottom of the tank. Your coals go on the grate, and hot ashes fall onto the bottom of the tank - much less worry about burning through than actual hot coals on the bottom - plus, it lets you get an air flow under the coals...

Look at the finish - look for shiny & crystalline or rough finish. You are concerned with the internal panels. Below image is the typical look, but I have seen large walk-in freezers build with galvanized and painted panels

Good suggestions. It would be cheaper, but the one downside would be the storage space. By not saving the large panels, I just pack up the wood frame (which is bolted together for easy disassembly) and it stores in a very small space.
