So I got my fatties all put together, I have them in fridge to solid up, going to cook in morning, ideas on time and temps? What type of wood would you do out of these choices, hickory, cherry, mesquite? Let me know!
So I marinated these nice butts all night and day, figured on smoking them all night, I have MES 30" smoker, how long are you all thinking and what temps? I plan on pulling them! So I know desired temp should be 200-205, but I know they can stall- what's likely hood they will be done by noon...
Yes I marinaded it for about 5 hrs in some Montreal steak marinade. Then wrapped it up in Bacon, rubbed it wit a little garlic and put it in. Using mesquite wood. We will see! Also put some apple cider in the water pan.
