    I agree with they guys on the two hour per pound and the beach towel wrap at the end to keep it warm and let rest. That one looks good to me i will take a sandwich please.

    That's true its hard to guess the temperature of heat . You might want to look for a good remote control Gage . I love mine my wife bought me a ivation thermometer with both meat temperature and heat temperature works great . Good luck with your future smoking projects if i can help just ask...
