Are your baby backs this thick?
2-2-1 refers to 2 hours on the grill, two hours wrapped in foil with liquid of your choice (I used red wine) and 1 hour on the grill to sauce if you like.
I usually do mine 2 hours 15 minutes, foil for 2 hours 15 minutes, then 15 minutes meat side down to...
These baby backs were bare for two hours foiled with 1/2 cup of red wine for 1 hour and are on the grill for 1/2 hour or so for saucing. Come out tender and juicy every time!

Hi all. David from South Mississippi. Got a Big Joe this past May and have been trying to learn ever since. Great sight with lots of helpful tips. Can't wait to post some pics!
I have done plenty of baby backs using a modified 2-2-1 method. I put them on my Big Joe at 260 for 2 hours, then wrap them in foil with a 1/3 cup of Merlotor Pinot Noir for 1 hour, then unfoiled and back on the grill for sourcing and a 1/2 hour more and they are perfect!
