Its been a busy morning, the first turkey on the smoker was for a CO-Worker of my wife. When I did my test turkey 2 weeks ago, they liked it enough and requested me to do one for them.
My wife didn't look like it was a request when she mentioned...
In my experience none of the rubs I have used have anywhere near that heavy of a salt mixture.
If you were to take your favorite rub, then add 4-6 tablespoons salt, 2 tablespoons baking powder to it, then I can see it being similar.
Then note the key part of leaving it in the fridge uncovered...
It wouldn't break my heart to get a big mouthful of garlic butter.. Heck I would just toss in an extra piece of turkey.
However, point well made and I myself will have to watch that, for the co-worker I am doing one for wouldn't like that I am sure.
The stock thermometer could be the issue.
I notice in your signature you have a Maverick ET-732, have you used it inside the MES to see if the temps are different than the stock one reads?
Yeah, I had a small issue on the skin as well. I am doing one for some work friends, and I may have to pull it a tad early and toss it in the over at 425° to get that crispy skin.
