    I agree with Arnie maybe 2.5 hrs was a little long. As he said checking the internal temp of the breasts would let you know when they are done. I would also try wrapping them in bacon and see if that helps.

    Question about buttermilk brine

    Sorry, I thought I found it for you. However, when you look at the picture, I noticed there were green onions in the picture of the bowl with the brine in it. Maybe by chance it is the same brine as the one from his earlier post.
