Grand Junction Catholic Outreach Soup Kitchen, February 19

For my Sixth year now I cook for the Grand Junction Catholic Outreach Soup Kitchen.  The third Saturday of every month finds me at the soup kitchen cooking for the homeless and helping the soup kitchen use up the "weird stuff" that the home cooks don't want to mess with during the week. For...

Can I freeze bacon in mid cure?

Freeze it.  Thaw and finish as normal. The meat is actually cooked in the first few days of curing, the rest is just salt and spice equallibrium taking place.

    The American Classic

Tonight the American classic!  The hamburger, for the wife and I we do it on bread as the rolls have to many calories for our eating habits.  We get smaller rolls, just did not have any this time.  We raise our own beef, but the butcher has a pattie machine, I love the pattie machine. If you...

    Emergency "Smoking Issue"

You already had the meat to 140 F at one point. You are OK. After the meat reached 140 F you had several options.  You could continue to cook above 140 F forever,  You had two hours to bring the meat below 70 F and then 4 hours to get it below 40 F.  Or you have 4 hours in which to serve it...

    restaraunt commercial smokers?

I have two Southern Pride, a 750 and an 1150.  When I researched cost per hour of smoke it was the best.  When I looked at them there was no doubt I had to have it.

    Philadelphia Scrapple

Almost like a sweet lebanon stuffed in a canvas type bag, about 5 pounds each.  Made with deer... smoked freakin hard.  Stuff was great, but we never made it ourselves as it was polish and dairy beef we worked with, so never had a recipe.  Deer butcher would know if they had a smokehouse as part...
