Haven't fired up the mini for a couple months. Decided some Baby Backs were in order.
Mini is rolling with Royal Oak lump and hickory chips. Chips are not working great. They burn too fast. I have it noted to start using chunks.
Shooting for a pit temp of 225-250.

Did some upgrading today. Added a second ball valve and riveted the lid to the bottom of the pot. Still want to add another cooking rack and add latches to make it all one unit.
I got so caught up in everything that I posted this in the beef section because, well, their burgers. These are actually venison burgers! Still tasty nonetheless.
The burgers turned out great. Smoked at 300* to an IT of 155*.
Topped with pepper jack cheese.
Plated up on toasted buns served with a side of sweet potato fries.

Overall they were great. It was getting late and IT was only 140. Pulled them and on to the grill they went to finish. Have to get more familiar with the Mini but we are getting there.
