    AU JUS (Leftovers)

    That's a great idea!  We typically have more juice leftover from a roast or a smoke than meat so, I freeze it in a large chunk and it usually finds its way into a pot of soup.  Chris

    I haven't hot smoked any yet but It's definitely on my short list.  Some of the folks here really seem to like it.  I think it is worth giving a try.  Maybe with the next batch.

    Looks great!  We used to do 100 pounds every November and dried it over the winter in the attic.  Just salt, pepper and sambal olek.

    That's it.  I cold smoked mine, so it has to be cooked like regular bacon.  Some prefer to hot smoke their BBB.  That's on my list of things to do.
