It was recommended to me to use these skewers for easy handling and to "stuff" some fat into the shoulder. Seems to have worked. Almost ready to pull off the smoker. Like most of you have said - it's a late night.....But those already asleep won't get first dibs...

Well dinner was served and even though I had trouble keeping the temp's at 240f they turned out good. My wife took the sample and was amazed.
