    My first prime rib

Thanks guys.  I was very happy with how it turned out.   I was pretty scared to do a prime rib, but it turned out really easy.  As long as the internal temp doesn't get too high, there's really not much you can do to screw it up.   Overall, I'd say that it's much easier than smoking a brisket.

    My first prime rib

I don't think it's actually a "prime" cut, but it turned out pretty good.  $7.99/lb, not sure if that's good or not. Was going to dry age it in the fridge for a week, but didn't have the balls to do it. I was too worried about foodborne illness.  I left it in the fridge for 1 night, then...

My first fatty - Thanks to everyone!

Thanks.  I have some 2lb chubs of sausage in the freezer, so perhaps I'll try using those, with a 1/4 of it left over.   Do you guys have any tips on rubs/sauces for a breakfast fatty like this?   I served it like this: Sunny side up egg on top of fatty. Slice of fatty on top of toast Toast...

My first fatty - Thanks to everyone!

Hey guys. I've been reading all your fatty posts for a while now, and finally tried it yesterday.  Thanks for all the info. First impression: It was a lot smaller than I thought it would be.  It looked a lot bigger on the internet.  [insert dirty joke here] I made a very simple breakfast...

How long to smoke a chicken?

Thanks, SmokinAl.  Do you smoke it dry first? Or is it raw when you put it in the pan with the liquid?

How long to smoke a chicken?

Thanks everyone so much for all the information. Looks like I will definitely be smoking these in the evening a day or two prior. Then putting them on ice, then to the fridge until I take them to work.  And a brine before the smoking. Another question: If I WANT "pulled chicken", how do I get...

How long to smoke a chicken?

I'm not too worried about keeping the chicken warm once they are wrapped in foil/towel/cooler.  Unless you guys think I should put them on ice in the cooler? I'm more worried about the 7 hour cooking time. Will that be too much? Any recommendations on cooking temp?  I'd really prefer not to...

How long to smoke a chicken?

OK, this is not the normal "how long to smoke a chicken" question.  I understand that you want the meat to reach 165 or 175 depending on the cut of chicken. I plan on doing whole chickens. My issue is not with not having enough time, my issue is having TOO much time. I want to smoke a chicken...

Low Carb Diet and Smoking Meat

I am aware of the sugar in the rubs, though I don't worry about it too much. Like I said earlier, I'm not trying to achieve ketosis, but just trying to cut most "bad" calories, which is accomplished with the low carb thing.  What is a "bad" calorie? I have no idea, I just make it up. I'm not a...

    Baby Back Ribs question

Thank you guys so much for the advice. I think here is my revised plan: Thursday night: put rub on ribs Friday after work:   1. Smoke ribs for 2 hours   2. Put ribs in foil, meat side down with FJ. Go another 2 hours   3. Keep in foil, let cool on counter for 30 minutes   4. Place in...

    Baby Back Ribs question

What about putting the hot ribs in a cooler full of ice? Then to the fridge?

    Baby Back Ribs question

Thanks so much. I believe it is your FJ recipe I used.  I'm going to try meat side down next time, along cooking it the night before. Ribs are being served Saturday for lunch.  Here is my plan: Thursday night: put rub on ribs Friday after work:   1. Smoke ribs for 2 hours   2. Put ribs in...

Low Carb Diet and Smoking Meat

Wow. A ton of information here.  I don't think I'm doing a specific "name brand" diet. Here is my theory: If I cut out carbs, that means I have to stop eating French Fries and potato chips.  That cuts a million "bad" calories out of my diet.  Cutting bread out is also huge for me. I've noticed...

    Baby Back Ribs question

Thanks for the compliment.  If I do the 2 day smoke, I'll definitely take some pictures.  You guys think I should wrap in foil (with liquid), smoke for 2 hours in foil, then put in fridge?  Or cooler with ice?  Then what? Just stick it back on the smoker the next day still in foil?  Or unwrap...

Low Carb Diet and Smoking Meat

Hi guys. I'm new here, I just posted in Roll Call.  Anyway, my wife and I started a weight loss challenge (against each other) a couple days ago. I'm doing the NO/LOW CARB diet, and I have no idea what she is doing. She ate a special weight loss candy bar for lunch yesterday.  Anyway, it looks...

    Baby Back Ribs question

OK thanks. That's what I did.  After I did it, I thought that if I had put the meat side down, it would have braised the meat, making it more tender. Perhaps too tender...

    Baby Back Ribs question

I may try the apple juice/vinegar mix next time. Another question:  Do you put the ribs meat side up or down when in foil?

Thanks so much.  I've already posted a picture in my "ribs" thread, so it looks like I'm OK with that part.  Looks like I'll have a fun time over here.
