Bottom Round VS. Top Round for a Party

There are two cuts of meat on sale this week, top round or bottom round. We are having a 200+ person party that I thought I would do some sliced beef, and pulled chicken sammies. Which cut would be easier/better? Advantages, Disadvantages? I like the idea of a quick smoke, for both the chicken...

advice on how to cook a hog under ground

Make sure you have lots of beer.....dig a pit, start a fire with some hard wood, get that thing really hot and burn lots of wood, make sure you have a good bed of hot coals. Throw in some river rocks....lots of them (be careful for exploding rock)...when the rocks are hot and the coals are...

Smoked Baked Beans From Dried Beans

Make sure the beans are soft and done before putting in the smoker, don't count on cooking your beans in the smoker, you are just adding and melding flavors in there. I like Bad Bobs idea, soak overnight, toss in the crock pot for 8 hours, drain the water and then prepare your beans for the...

New member and first time smoker

Welcome! Yes is is normal at first, you will constantly be seeking a better method for making smoke in your gasser (which is half the fun for me). Start by using big chunks, big chunks with small chips all around, soaked, not soaked. Try different containers (cake pan or cast iron skillet) just...

    Smoked Rib Eyes

Your ribeyes look amazeing! I have yet to smoke a beef steak, but this is making me hungry sir! That screen looks to be hot dipped galvanized wire mesh? If so do not use it! The fumes emitted during cooking are very harmful to your health. Why not cook directly on your cooking grate?

    Deer Sausage Info

Jerry, 1. yes no problem doing this at all, some reccomennd freezing game first to kill any parasites in the meat. I do it all the time and make small batches (25 lbs) at a time. 2. Any chance you can pool your $ and get a $300 grinder? If not this is the best one for the money in my opinion...

    Problems coming?

Those things are way too clean! Get after it man! What others have said about modifying your Masterbuilt is all true. Part of the fun for me is trying new things with my smokers to see if I can get longer smoke times, more stable temperatures etc. I also love to see if I can do different things...

    Pork Hock smoke?

I was in the freezer this morning retrieving a ham and some beef short ribs for this weekends Easter festivities. I came across a pork hock that I recieved that is raw/not cured. I did a search and the only threads that came up was for cured hock smokes. I was hoping to smoke this on Saturday...

    Smoked Trout-Q View!

Sorry for the late reply, This recipe is for a Lil Chief (although I used my gas smoker), I think I ran my smoker a bit hotter than a lil chief but not much, I tried to keep it around 120-130. I didn't take it to any specific internal. Just smoke for 5-6 hours and start checking. I also do...

    kirby bucket mixer

I think that is a DIY project only, looks pretty straight forward but requires time than I have. I just purchased a 44lb mixer from cabelas that attaches to my 1hp grinder for $199 (on sale), they also have hand crank mixers for around that price. I know for a fact that I couldn't make a kirby...

I do not own an MES but I would guess you would be fine with the standard setup for a while (it just requires more attention). The AMNPS is just such a versatile tool, you can load it up and get hours of perfect smoke before having to reload. You can also cold smoke things such as cheese, bacon...

    First Corned Beef Pastrami's (w/ Q-view)

That is a great looking strami sammie! I cook my short ribs 3-2-1, I use some sort of fruity beer (or pomegranite blueberry 100%  juice) in the foil, super good and tender everytime. I think shorties need to be braized (or smoked and foiled) or they may as well go to the dogs....just my opinion.

Welcome! First season your smoker, I spray mine with an entire can of Pam, then run at 250* with smoke going for about 4 hours. Then drop in a "fattie" (this will be your first smoked meat project) See the fattie section for some great ideas. Then move to a bacon covered and brined...
