All great advice given so far. This is where I learned to do brisket. One other suggestion that I learned here was injecting the brisket with beef broth. I've done them both ways and I really liked the results I got when I injected the brisket.
I don't know if I've been lucky or what, but I haven't experienced that type of stall. I've smoked at least 8-10 pork butts that were around 8-10lbs. None of them have ever taken over 10 hours to get to the recommended 205* for pulling. The stalls that I've had haven't lasted more than 1-2...

Enjoyed your posts with Cabin Fever. I noticed in your earlier post that you were looking at the Yoder Cheyenne or Wichita model. I bought the Wichita model last March and have really enjoyed it. Haven't missed to many weekends of smoking something. Been real pleased with the results...
I would go with the WSM 22.5". It will be a little more than you want to spend, but from what I've read here it will be well worth it. If you decide to go electric than the new MES 40" would be my choice. Good luck with the decision.
Just curious, has anyone tried the A-MAZE-N smoker with a SFB type smoker to do some cold smoking? With all the threads dealing with the A-MAZE-N smoker and the kinds of cold smokes people do I thought it would be something I would like to try. So if you have any experience with this I would...
Another alternative is a yoder brand smoker. They sell a model that looks very similar. The guy who makes them used to work for Oklahoma Joe's. The website www.atbbq.com.
Me too, I'd give the new Mavirik ET 732 a go. It's on sale till the end of the month for 49.99. If you don't want to spend that much the ET 73 is still a good option at 39.99
