My 3 birds are done now, all at or around 170, I am letting my fire die down. I wrapped them in foil to keep them from drying out. Dinner isn't until 4, I was shooting for being done at 3. Can I leave them on the smoker with low heat, or better to wrap them in foil and towels...
Thanks for the feedback everyone, I just got done putting them in the soak. It was about 8:00 and I plan on cooking at 8 in the morning.

I have 3 turkeys going on tomorrow. I was going to brine all night, but after reading a few posts on brining here, I think maybe I might be too long. I was going to put them in the brine tonight around 9-10 start cooking tomorrow morning at 9 to be done by 3. The turkeys are 9 to 10# ea. Does...
Thanks Ron, That's what I was thinking. Everybody is supposed to bring some sides, but you know how it is, someone always fails to bring what your counting on, I like to have more than enough. I will fire up another bird!

My wife and I have just got through counting heads for Thanksgiving day, we are up to 22 and a few don't knows, could be 26 or 27, how many pounds per person is the average? Been looking through my books and can't find it. I have 2 10# now, thinking I need another.
Hey guys, does the salt in the brine mix have to be Kosher salt, or will regular table salt work? Whats the difference?
