I'm thinking that you need to give it a bit more time. At an hour and a half a pound a 2.5 pound loin should take atleast 3.75 hours. This is just a guide line though. It could take longer. I've seen cooking time go as much as 2 hours a pound. Time and paitents is the formula.
Good Luck and...
I started a 10# brisket last night around 7:30pm. My son is coming over and is bringing his GSMS and he is going to do acouple of slabs of spare ribs. There is nothing better then a father/son smoke on fathers day.

I live in Poulsbo WA and it is raining here also. Living here in Washington we get quite a bit of rain so I have my smoker under a covered patio. That way I can BBQ all year long. It would really suck without it.

I've been using the afterburner for about 2 months now and I just love it. The after burner is a propane burner that you put into you fire box. They make them for both horizontal and vertical smokers. To make smoke you use a 46 oz juice can and put your wood in it and place it on the burner and...
Hey Keywesmoker....are you saying you wrap you fattie in paper with rub on it and then put it in the smoker with the paper on it? I take it the smoke penatrates the paper and still get to meat? If this is how it works that sounds like a great idea.

I'd pull it tonight and the store it in several glad storage containers. I usually freeze several of them and then pull them out of the freezer when the one in the fridge gets low. I then reheat it in the microwave low and slow like I cooked it. That is when I put the sauce on it. It always...
I have a question. I'm smoking my 5th ever brisket today. I bought a small full brisket from Walmart. After trimming it it weighs 7.8 lbs. I started it at 3:30am this morning. I was figuring that it would take about 12 hours and finish up aroun 4 to 4:30 pm. Well, it is now 6:40pm and it is now...
Two little old ladies were sitting in church. One says to the other, "This sermon is so boring that my rear end is falling asleep." The other says, " I know, I've heard it snore three times now!"
Welcome Ive. I've been smoking for about a month now and I have learned so much from the folks here on the SMF. Everyone is so nice. I'm hooked for life now. I've had a few flops but for the most part I'm really pleased with what I've produced.
Have fun learning,
Bob
I did a pork shoulder roast today and it turned out fantastic. I made pulled pork with it. I started with a 4lb roast and put my rub on it last night and wrapped it in saran and put it in the fridge for the night. I started my offset smoker at about 9:00am and put the roast on at about 10:00am...
I just purchased a charbroil silver offset bbq two weeks ago and so far I'm really enjoying it. I've been using a webber kettle and gas gill for 20 plus years but finally broke down and have gotten into real bbq. I'm not sure why I waited sooooo long for. So far I've done baby back ribs, they...
