    Here's the ribs finished... After the first two hours, ready to be wrapped... Done Leftovers I have to say, they came out way better taste wise than on the ECB. But, I was disappointed that I didn't get the same amount of bark on these as I did on the wood fired smoker.

    Not sure, they look fine on mine. This is the first time I've used Picasa to host images though, so I really don't know. They were sized to 800 pixels high x 479 wide. Should look ok. I can't wait to see how these compare to the ones I did just like this on my ECB.

    Well, all I asked for Christmas was Bass Pro gift cards, so I headed up to the local Bass Pro this morning and got me an MES40. The 20070311 model. Got 'em to price match Cabela's too since it's $30 cheaper there. It's preseasoning as I type this. Also threw the new AMNS in to burn off the oil.

    I was just about to ask this question since I got my A-Maze-n smoker today. I know the Germans smoke their grains with beechwood for making Rauchbier. I believe Cherry is used in smoked porters if I'm not mistaken. Stone Smoked Porter is a great one!

    Hmm, I'll have to do some nuts when I do the cheese. A word of advice...after opening the bag of A-maze-n dust to smell the contents, DO NOT try to zip the bag almost closed and then suck the air out. Unless you like the taste of dust!! And, about the UPS guy, I noticed he was wearing shorts...

    A-MAZE-N Dust - Opinion on all around best wood dust in 5lb bag size?

    I just ordered an Amazen package yesterday...it came with a lb each of hickory, maple, and cherry, and I ordered an additional 5lb bag of hickory, and a 1lb bag of peach. Hickory is my go to wood, but I like a little peach mixed in, it makes the smoke very sweet. Can't wait till it comes...

    These went over really well in deer camp! And for those who are wondering...I will definitely be doing some venison smokes (if I ever get to stop traveling for work). I shot a 6 pointer and three does. Gotta love herd control tags!

    Thanks all. Packaged them all up this morning, then couldn't resist, so I sliced one up; it was fantastic. I put the slices in the toaster oven for 10 minutes and it came out perfect.

    I made the one from the wiki http://www.smokingmeatforums.com/wiki/fattie-piston I think I need to roll them a bit tighter, that may be why they look so big. They held together just fine though, I am able to handle them with tongs and they don't fall apart or anything.
