First Butt/Smoke - Wood catching on fire - Please help

Hi All, I have an ECB gas propane smoker. I'm doing my first butt today. I wrapped 3 chunks of hickory in foil and placed them on the lava rocks. After about 30 minutes, I noticed the temp was too low. I turned it up and noticed that it kept going up. The wood chunks caught on fire. I sprayed...

PP - Missing out with no finishing sauce?

Wow! Thanks for all of the suggestions everyone! I think I'm going go try and use the natural juices and then makeup 2 sauces on the side. Question, I don't have an extra rack for a drip pan in my smoker. There's a water pan below the cooking grates. Can I just put a pan on top of the water pan...

PP - Missing out with no finishing sauce?

I'm about to smoke my first butt this weekend. My wife and I love pulled pork, however she doesn't like vinegar based sauces. I'd like to do a traditional finishing sauce, but I'm worried she won't like it and thus reduce her enthusiasm for me smoking in the future. However, I've read that the...

Also, I had a question regarding charcoal. Could I add charcoal to the lava rocks to add more smoke/flavor? Are you able to have a mix of charcoal and lava rocks? Thanks!

New Smoker - ECB w/ Gas - Wood placement? Soak?

Hi All, I bought a Brinkmann propane smoke n grill yesterday. I'm looking to smoke my first butt this weekend. The owners manual says to put the wood chips/chunks on the lava rocks. Is this the best placement? (there's not a lot of room for a box due to the water pan) If so, how many wood...

New to Smoking - ECB vs ECB w/ Propane

Thanks for all of the feedback everyone. I may be leaning towards the propane partly because I am able to get it for $50 now (I think they're $150+ new). Also, with school I won't have as much time to watch over it as I'll be studying so much so convenience may win out here. The one question I...

New to Smoking - ECB vs ECB w/ Propane

Hi everyone, I'm a huge BBQ fan and have decided it's time to get serious and start smoking. I'm about to start grad school ($$$) so my budget is pretty low. I'm debating between the $39 ECB from Home Depot or a $50-60 ECB gas smoker (http://www.amazon.com/Brinkmann-Smok...9742601&sr=8-5) I...
