Three hour mark...
Temperatures finally locking in lower range..ready for a long smoke filled day!
Added a few chunks of Apple and about 5 nice chunks of lump...ready to cruise.
Wow it's cold out! Even with temperature outside, had a hard time keeping temps down.
Used two chimneys of Kingsford Comp, Apple & Hickory Chunks
Finally settled around 250, damper barely open.

Going to do some N.C. Chopped BBQ for the Super Bowl. Cooking close to an Eight lb roast tomorrow.
Made some basic rub to cure overnight.
This is my first time cooking boneless butts. Since the wind is crazy here in the DC Area, I froze the smallest butt for a later smoke. Will have more...
Thank You....it cooked pretty well without basket so far. Just wondering if it would be problematic with extended cooks, i.e. too much air for slow controlled burn.
