I've got stainless nuts/bolts. Just need to find a compatable angle iron for the rack supports. I definatly don't want to use metals that will wind up making people sick.
Okay, I'm still working on my fridge conversion. I finally found expanded metal for the grates themselves. But I was wondering if aluminum is safe? I can't weld, so it will be all nuts and bolts. Mainly worried about health concerns and structural integrity.
My only question is what did they feed that thing? I can't see any reason you couldn't smoke it whole if it fits in your smoker. Just going to take longer to cook all the way through.

Okay everyone, thanks for the help about the racks. Next problem, I need smoke. What is the best way to smoke in a fridge. Maybe a cast iron pan? Any help is good help.

There are special mats made to go undr grills and smokers to protect decks. Not any more than $50 at Home Depot. Check them out. Cheap and easy to use.
It was my landlord's that went out. I bought another for $100, charged him, then kept it for me. Yes I took out all the fiberglass insulation already. Think it's okay to use like that?
Think I need some research on the insulation then. I thought it would be okay if I fired it hot for a few hours to burn anything off. The liner on the inside is steel. I plan to keep it in.

That's what I was hoping to hear. I looked for other options, but all I could find was galvinized and zinc plated steel. I know those are both "no-no's".
Seems to me that overnight is perferred, but not the rule. I've done it both ways, and they both work. BUT, I do perfer where I have over night to prep the meat.
