Jalapenos are coming in like mad.

Any update on this? I'm thinking about doing this with the last few Jalapenos I've got. -Thanks

    Brisket tomorrow

You said you're going to wrap in butcher paper, is this like freezer paper? I've never seen this done before. I always wrap mine in foil. How do you determine when to wrap? Temp or time? What is your final "pull" temp on your brisket? I'm a 190 guy; then wrap in foil, then in towels, and into...

Please help me build my smoker in time for deer season

Using galvanized metals in your smoker is a hot topic on here. Basic direction is don't do it. A quick search I found these 2 topics: http://www.smokingmeatforums.com/t/52524/no-galvanized-in-your-smoker-its-toxic...

Please help me build my smoker in time for deer season

I knew there was something else I was going to comment on. I have a pipe pellet smoker like the AMPS. Use it primarily for cold smoking but it can be used with your element on. Had no issues with it. Just need to be sure it little bit above the heat.

Please help me build my smoker in time for deer season

Yep drilling through the enamel is a pain. I just used a standard bit but I'm pretty sure I destroyed it by the time I was done. Tile or mansonary bit might work out. Only issue with putting the vent in the door is if you do the fan idea then you will have to route the wires through the door...

Please help me build my smoker in time for deer season

So I got those pictures taken, I realize now I didn't snap one from the inside of the cabinet where the air comes in. Sorry I can get that if needed. What I did was use some of my left over 24ga sheet metal and bent a box and mounted the fan on the outside of the box. The box covers the 2 vent...

Please help me build my smoker in time for deer season

I'll see about getting some photos taken this evening. As for the shelves I used angle iron for the brackets and cut expanded metal to fit. I used the "flat" expanded metal for the most of my shelves, easier to wire brush. Pay attention to the strength of the stuff prior to cutting and be sure...

Please help me build my smoker in time for deer season

Oh one other thing. I noticed your platform and wheels setup. I did a similar thing and found with the door open the fridge is very top heavy and wants to fall forward so be cautious of this. I had my whole smoker blow over one time on a gusty day. I was done smoking just letting it cool down...

Please help me build my smoker in time for deer season

Hey DDS, Sorry I haven't been paying attention to the Fridge builds section for a while. Your fridge looks a lot like mine (http://www.smokingmeatforums.com/t/105764/heres-my-fridge-build-mid-build) I opted to go the super cheap route and use scavenged oven parts to produce/control the heat. I...

    BBB: Is it Ruined?

I cured up some BBB last week and started the smoker last night with my AMPS and checked it at 12am everything was going great. Shortly after my AMPS went out (probably didn't mix the cherry with enough apple/hickory). I've never had this problem before. I would guess it only got maybe 2hrs of...

Headed Through Kansas City Where Should I Stop??

Hey everyone, my wife and I are headed to Kansas this weekend, the route takes us through Kansas City. Just wondering if anyone has any recommended stops for us? Thinking a BBQ place for lunch but I'd also like to check out any cool BBQ stores where I might find a gadget I have to have. We...

    Plywood Smoker with PID Controller

If your using 2 separate cords 14ga should be ok.

    Plywood Smoker with PID Controller

At 30-40ft...I would say yes. Use the closest outlet with the least amount of cord. See if your hot plates run warmer. Also if you are running the both hot plates off the same cord be aware of the combine wattage. At 1900 watts your drawing almost 18 amps, you would need to have a 14ga cord if...

    Plywood Smoker with PID Controller

So I'm thinking...This smoker is being operated on your roof, how long of an extension cord are you running? Because I think you may be seeing a lot of drop which could effect the amount of heat your hot plates can produce.

    Spicy rib rub

I like to apply a layer of garlic chili paste to my ribs then use my normal sweet rub when I'm looking for some extra kick. The garlic chili paste I use is the stuff from the Chinese foods section of the store; small (5oz ish) jar. I think its from the same makers of Saracha, has the rooster on...
