    High Mountain jerky mix

Has anybody ever tried making a brine with the  High Mountian Jerky mixes instead of using it dry?  I would think that might be a easy way rather then having to sprinkle every piece with the dry mix. Mark

    Wild Pig hams

Yep gonna be a while on this one..... Probably a bit more then the 2 weeks.  His recipe says a month for hams to soak in the brine....... This one is only 7.5 lbs so maybe it should only be 2 weeks.  I sure don't know but don't want to end up with it being under cured,

    10 Lbs. of Kraut!

I bought the 20 liter one that had free shipping with the stones to weigh it down. Used it last summer after cabbage was done and made 48 pints of kraut.  It worked great! Before I had used a 10 gallon crock my Grandpa had with a relish tray on top and a bag with water for the airlock.  The...

I am in the process of trying to put a controller/ heater together now. Not so much for sous vide but to finish salamis, hot dogs etc.  Although it will work to do sous vide I am sure. Using a pid, thermocouple to control it.  Trying to make it a self contained unit that I can mount in a cooler...
