    Smoking Catfish

    Welcome to the SMF Ray! I got excited when I saw your post as I too am looking to smoke some catfish. I've done salmon and was successfull and it sounds like catfish is next. I can get the filet's at the grocery but I bet a nice fresh catch would work out better. LoL! pyro

    Welcome to the forum ExTex. New myself, I've found some success adding my wood to the damper side of the firebox and pushing the coals towards the opening of the smoker as the wood burns down. The wood doesn't have much of a problem igniting next to the air intake and it's easier to control...

    Burn Barrel for "True" Wood Smoking!

    Jeff, what's the size of your burn barrel? Looks like a 50 gal., it's hard to tell in the pic's. Also, what size firebox are you feeding? I have a Char Griller with a fire box about the size of a 5+ gallon can. I think a 50 gal. drum would be overkill for me. I'm thinkin aroung the size...

    Looks like the silver smoker mods could also work on the Char-Griller Smokin' Pro. Anybody try any of these on that unit? What changes do you get bringing the stack down to the grate height? Should a new thread be started for char-griller mods...?
