    Coz raised the right issue ...... the more meat you put in your unit, the longer it takes to reach the desired temparature. An example.... boiling one cup of water is much faster than boiling one gallon of water. I also think your MES was cycling on less as the temparature of your meat rises...

    I was planning to make something similar, but with four sides. Using hinges to make it foldable is an excellent consideration. I was going to coat the exterior faces with a water repellant coating to handle this year's predicatably unpredictable weather.

    The bacon grease seals cooked food inside a container. Ususally the fat used is clarified butter. I suppose lard works just as well. The most notable food preserved this way is potted shrimp.

    Seconded..... taste testing Also, not all paprikas are the same...only taste testing will tell. Also, I'm told tablesalt is twice as salty as kosher salt by volume. Many recipes don't state which type of salt was used. This is a simple error most anyone can make.

    Is it possible that too much rub was applied ? Admittedly, I'm still using a store bought seasoning salt. If I'm not careful, I can over apply the salt.

    Grrrrreat resource, many thanks. Been grabbing this stuff from alt.binaries.multimedia.cooking ....... Dry aging seems like sloooow dehydration. aka controlled rotting. Also, I think the use of towels also keeps the surface from drying out too much so less trimming is needed afterwards.

    Go for a variety called Sungold, I think. The one year I planted a few plants, I have tomatoes galore. Plenty of water, sun, and fretilizer helped I guess. Those plants did get very bushy, but very productive. You'll need a large pot to hold each plant to reduce any chances of it falling...
