    I have a wsm also. I think you are starting with too much lit charcoal. If I want 220 I start with a 1/3 of a chimney. Also dont pour lit charcoal on top of unlit because it will light the unlit right away causing way too much burning. Try using the minion method. There are a ton of posts and...

    Alot of guys here myself included use the 3-2-1 method. 3hrs smoke 2hrs foiled and 1hr smoke. If u search there are tons of threads on this method

    I'm going smoke a cross rib roast on my wsm. I was looking for a little direction on time. Its a 5 pound roast. I was planning on taking it to 140IT. Should I be expecting 1hr per pound? I am also going to use Chef JJs au jus recipe as it seems to be a hit on here.

    I just finished my first smoke on a 18.5" wsm. I did the same as you. St Louis spare ribs. They came out excellent! I used the 3-2-1 method as well. Good luck! (Not that you'll need it)
