    BBQ Diary with Woody

That's great to hear. Do you think I'm being a bit too self-critical? What's your opinion on the membrane in beef back ribs? I cooked them with the membrane, and I think it helped keep them together. However, it was also quite firm and hard to chew. Is there a trick to dealing with that?

Yesterday I had beef back ribs. Unfortunately, I missed the right time to wrap them, so they turned out a bit dark. But the taste and texture more than made up for it. Overall, I was quite happy with them.

Wow, a very impressive collection! And a great example of how something like this can be designed.

The shipping costs will probably exceed the smoker's material value. 750lbs won't fit in an envelope. I think steam punk describes it very well. I like mechanical things, and this style was perfect for the air intakes. But there are also other great designs with throttle valves or circular intakes.

Thank you :-) You can believe me, I'm proud of that. I'm really sad that I don't have time to cook anything this weekend.

Woody - My first BBQ Smoker Build

Thank you so much, you guys are awesome! That's right, laser-cut parts make the work so much easier. The welding is then really fun because everything fits together so well. The only downside is that you can't just jump right in; you have to design everything in CAD beforehand. Dave's...

Woody - My first BBQ Smoker Build

Hey guys, On various trips to different corners of the USA, I became increasingly addicted to BBQ. I love to cook myself, and I enjoy working with metal both personally and professionally. This led to my desire for my own smoker. Having already experienced the quality and flavor of BBQ in the...

Gulf Coast - Recommendations for restaurants, sights and spirits

I would like to answer this question myself and help others. It was a very nice trip that we would do again at any time. Of course we visited a number of BBQ restaurants and can now list our favorites. Moe's BBQ in Orange Beach, Alabama An incredibly juicy and tender turkey. Chicken tenders...

Offset Smoker - Direct Grill - Hybrid

Thanks for the input. So apart from the seasoning, you didn't notice any disadvantages? Have you noticed any ash residue flying around or any loss of flavor?

Offset Smoker - Direct Grill - Hybrid

Hey Red, Thank you for your answer. No need to apologize, I'll be happy to explain the exact details of my plan. The smoker is being completely rebuilt, but the size of the CC and FB have already been determined and the pipes have already been delivered. I had to do that because, on the one...

Offset Smoker - Direct Grill - Hybrid

Hello everyone, I'm currently planning my offset smoker. I've been thinking about using it for direct grilling for a while. My firebox is too small for that, so it would have to happen in the cooking chamber. I would build a heat shield to keep the heat load on the cooking chamber as low as...

I've already searched and noted down relevant sites with recommended BBQs and sights. Now I'd be interested in tips from...
