I like mustard on the basic dog. And I always spiralize them.
A topped dog will get some queso on the bun, the hotdog, mustard, onion, and sometimes sauerkraut

Having the blade bone, and weighing about 4 pounds.... it sounds like you have the bottom portion of a pork butt. The (horn) muscles are some of the best on the roast. Here is a cross section of a pork butt. You have the section on the left side.
It's a type. They are described as an outside ham muscle. So producers isolate that particular muscle, and I believe cut it in half. This provides the suggested slicing face. They are 3.5 to 4 pounds, so very affordable for gifting or taking to a party or pot luck.

A couple of Texas BBQ joints are selling pastramied plate ribs, Dino size, and they sell for around $30 per rib.
... at Sam's Club. Just in time for the Fall holidays. The ones I bought all had December sell-by dates. I smoked one for some friends to take on a hunting trip, then sliced another and gave it a light smoke.
My Sam's has Chuck Roll in the walk-in for restaurants that grind their own burger. You just have to ask. These are in the 10# range and boneless so easy to portion or grind yourself.

Well I wouldn't use a rock to pound it through a deer pelvis, but the sharpness makes up for the lightweight feel of the models I have. The Talon series looks more heavy duty.
