I have seen where a lot of guys will do them the day before and then vacuum seal it then re heat for the next day if you search reheat pulled pork there are some other good ideas
When I do csr's I wrap them after2 to 3 hours in I put butter and apple juice in with them I know some don't like to wrap but I like to add flavor and moisture to them I also start with them in strips good luck next time they are one of my favorite things to do
