Hello from Arkansas (that's pronounced R can saw)

Welcome, and I hope nobody from Cans-ass takes exception to your pronunciation. Barry.

    Beef Suggestions...

Rib roasts for us. I do a couple 4-5lb'ers and there are plenty of leftovers for the eight of us. Salt, pepper, onion and garlic powder, and some rosemary. 5 hours tops at 230 degrees. Did my first one about 5 years ago and now they won't let me do anything else. Plus, rib roasts typically go on...

Welcome to the "dunk" side! Barry.

    Smoke question

The tube will put out plenty of smoke for a barrel smoker. It just needs enough fresh air to keep going. Barry.

Fork Tender Eye Round Via SV (On Sale Again!!)

Love your step by steps Bear! I used this same process on the same cut from a deer I got last week and it was the most fork tender hunka deer hind quarter I ever cooked! I used to grind the hinds into burger for sausage, or cut into jerky strips, or make dried venison, but I froze 15lbs of...

    Burned Up Gen 1 MES

Getting ready to convert my Gen 1 MES40 with the auber control. Just looking for the time to do it as I have everything needed. After reading your post I think I will go ahead and pull the back off it and check it out and replace the wires as Dave suggested. I got probably 10yrs out of the old...

    Truvia on bacon?

Pop's uses Splenda in some of his brines so I think you would not have a problem using another artificial sweetener. Barry.

    Jar storage

I use these stackable plastic crates for my quart jars. Holds aboiut 20 jars and stack nicely. I found them on craigslist from a greenhouse (used to ship plants) for under $3 apiece. I line them with cardboard and put jar upside down to keep them clean. I use this style for my Pint jars and...

Mailbox Mod not working on 30" Smoke Hollow

What Dave said, and try closing down the lower vents (keep top wide open). this may pull the smoke thru the tube from the MB Barry.

    Apple Sausage Recipe Help

Looks like a simple sausage recipe with apple juice instead of water in the mix??? If you didn't want much liquid you could boil down the juice (or cider) into a syrup first. Barry.

A few questions about BBR? Suggestions?

No time to experiment for this year so maybe just stick with what works. I think an overnight brine in old bay would be sufficient unless you are using cure, then you would need more time. Anything that will stick to the meat can be used as a binder for the rub. Best to improve your method one...

How To Cure And Smoke A Turkey

Love your tutorial Pops! (and your brine too!) Lately I have gone to slicing down the back and de-boning the bird except for the wing, leg, and thighbones. I inject the thighs and drumsticks and cure for about a week. Then into a mesh bag wrapping the skin around the breast meat so nothing is...

Cured Ground Beef Sticks (Bear Log Style)

That's getting up there on the fat scale especially without a casing to contain it. You could scale the recipe back and do a 1lb trial (with a drip pan below it). I would personally cut in some leaner meat. Barry.

    Ring Bologna Breakfast

    Ref; Squash/Pumpkin Uses!

I have a few hundred of various sizes and still have to scrounge around for certain sizes when the crops hit season. Applesauce is on the project list for this weekend. (you can never have too many jars). Barry.

Adding Smoke to Current Pig Rotisserie

The tube puts out a lot of smoke....try it, you could always get a second one later. Barry.

Adding Smoke to Current Pig Rotisserie

Are there vents on the top of the unit? It looks like a well sealed unit and smoke would go stale if it cannot get out. I know you don't want to cut any holes but an external smoke box might be a good idea. Think mailbox mod only prettier for the stainless. Barry.

Adding Smoke to Current Pig Rotisserie

Is there room to mount a rack over one of the burners for a cast iron chip tray? If you can post some pics of your rigs I'm sure you will get some ideas. Barry.

    Ref; Squash/Pumpkin Uses!

You don't need to grow them. Just stock up when they are cheaper in season Barry.

    Diet bread

Definitely not a low calorie bread. One slice of the lowest calorie recipe I have found is still 137 per slice. (and no, if you eat the loaf whole it is not considered one slice....I tried). https://tastesbetterfromscratch.com/skinny-banana-bread/ Barry.
