Thanks you guys for all the information. Being a rookie at this I want to absorb as much info as possible. I'll try to post some more pics of the smoker if not by this evening sometime tomorrow Again, many thanks.
Here is a look at the fire box. The front bottom is for the wood and the back for the chamber. It's not so much that I couldn't change the temp, the problem was keeping it steady. Lots of flucuations that made it difficult. It was too damn cold to sit out there and adjust it constantly lol...
It is a custom made smoker that my late brother in law made. You really have to sit with it and baby sit it in order to regulate the temp. Almost have to be sitting at the smoker for the entire duration of the smoke. A damper on the back side of the fire box to regulate the temp. I'm still...
Well I think I learned a valuable lesson today. My smoker is not meant to be used in sub zero weather. Tried to smoke a brisket and pork butt today. Up at 5, meat on by 6:30 but just could not keep temp regulated at all. Temp was around 0 when I started and never got even into the 20's here...
Forecast getting worse. Now probably going to be below zero as I trudge out to fire up the smoker. Doesn't matter! My mind is made up! Tomorrow night I will dine on brisket!!!!
It is a custom built wood smoker my late brother in law made. I hate the cold, and I mean despise it but I have been only smoking for a little over a year and half now and I can't get enough of it. After the busy weekends of the holiday, I don't want to waste a weekend at home. I picked up...
Must be a passion right? I'm planning on waking up Saturday morning with temps in the single digits just so I can smoke a brisket. I've got a pork butt that's been sitting in my freezer so I'm gonna throw that on as well, figure if I got it going the more food the better.
There is a very...
So a buddy of mine texted me saying I should do a meatloaf sometime. Honestly it had been something I had thought about before, I guess I just needed that push. Wrapped it in bacon and threw it on the smoker with some potatoes. Nothing overly fancy but it certainly turned out pretty good...
Flavor was really good. I used mainly hickory but threw in a few handful of cherry wood chips occasionally. The dog got some fat.....THAT'S IT!! She was probably hoping I screwed it up lol.
Well after a few successful pulled pork weekends, I finally decided to attempt a brisket. I love pulled pork but brisket has always been my BBQ love.
First of all let me start with saying thank you to everyone on this forum. I have spent the last several days pouring over this site looking...
