Good looking meal. And a good testimony to this forum. I love the advice that you get here but also the fact that you kind of get to know people that you have common interest with, that you wouldn’t know otherwise.
I made some today and the skin turned out nice. I smoked them for 1.5 hours at 230 degrees then I put them on a hot grill for a couple minutes on each side. The hot grill really helped the skin crisp up.
