Both Picnic's turned out great. Was a little nervous about doing them, wasn't sure if the skin was to be removed or not. Sold out on both picnic's in less than 45 min. That's a good days work,
Stall is finally over. After letting it smoke all night we are at 192 internal. So far going on a 17hr smoke. Fundraiser starts in 6 hrs. I think I am in good shape.
For the injection I used apple juice, sugar, water, salt, and Worcesteshire.
Yeah, that's my tempature controller the wife got me for my bday. I love it. But not as fancy, doesn't have the WiFi. I don't mind though. This is better for me anyways.
