    Joining from Japan

Welcome from east Texas! I spent 4 months in Japan, near Saporo, and although I never got into smoking while I was there, we (my coworkers and I) purchased a bbq grill similar to your metal smoker. Grilling was something that reminded us of home. I never realized Japan had a smoking...

The Best Sausages and the Wurst

That is awesome! Great display there. I love German sausage. What kinds of mustards did you serve?

    First Twice-Smoked Ham

I have to admit. I'm intrigued by the adult beverage, the corn chips, and the fire. Watching this thread. I'm anxious to hear how it comes out.

    Why mustard or any binder?

Good point. Thanks for the feedback.

    Why mustard or any binder?

I go with olive oil spray (Pam) or with nothing. The spray is very easy to work with and my rub sticks to it pretty well. Mustard just seems odd to me and I've just not been brave enough to try. I've traveled the world and eaten some strange things. I'm not squeamish. I'm curious... instead...

    Guess it's not a smoker.

If the fire underneath does not get you enough smoke, you could always put a tube or a tray inside. As long as you get enough air inside the tube/tray will generate a bunch of smoke.

    Monster Hatch Green Chili Chops

That's cool. Did he tell you what was in the Hatch seasoning (besides the hatch chilis)?

    Monster Hatch Green Chili Chops

I bought some fresh hatch green chilis with the monster chops because I never tried them fresh. I was expecting a little heat in them, but they are basically a long version of the green peppers that are typically sold in the grocery store. No heat whatsoever, unfortunately.

    Monster Hatch Green Chili Chops

Guess it is hatch green chili season. I was at Brookshire's (east TX grocery chain) the other day and came across these monster Hatch green chili pork chops. My wife generally likes thin pork chops and does not like anything associated with chilis, so I have never bought really thick pork...

    Chops

I'm going to add a char to my chops in the future. One of the things I really like about doing chops on the grill is the char.

    Chops

It is a Pit Boss 4. Below is a pic of it when I first got it.

    Chops

Bosslady said she wanted pork chops, so I got some out of freezer. Looked like they had the start of freezer burn so i got some more (and grilled them) and decided to play with these. I let them thaw out in the fridge, and no evidence of freezer burn. I had never smoked pork chops before, so...

    Not enough smoke??

I used to get gobs of smoke from my tube in my MES30. I did the following: - Load tube with your choice of pellets. - light the tube as recommended. - Place tube on rack right above loading port on right side of smoker. - Open the wood loading port 1/4 to 1/2 open to allow pellets to breathe. -...

Pit Boss 4 Vertical w/ Tube

I recently got a new Pit Boss 4 and I've been trying to use my AMAZN Tube in it. So far, all I've been able to get the tube to do is smolder and let off a trickle of dark white smoke. In my MES, the tube smoked like crazy. In my PB, it smolders until I'm done smoking, then the tube smokes...

New PB Vertical - First Cook w/ Rambling

My wife and daughters recently bought me a Pit Boss 4 vertical smoker to replace my MES30 that was really really old. I guess they finally came to the realization that I was never going to pick up a new smoker as long as my old MES kept running. My MES was all rusty, even had the start of...

    Hypothetical Brisket question?

Wow, that looks awesome. Congratulations on a job well done. My first brisket turned out really dry and tough, but it was long before I ever found these forums. I have learned a lot from the people on these forums and it has really upped my smoking game. I'm really wanting to do another...

First cook, first brisket on my new smoker

The Hardest Day of my Life

I, for one, enjoyed your story (except for the ungracious guests). The food you prepared sounded wonderful, and I'm sure it tasted great. Unfortunately, not a lot of people know or understand how much work and money go into great bbq (and great food in general). I promise you that your...

Interesting take on replacing Smoker controller - Commodore 64!

I always thought that when you let the smoke out of your commodore 64's, they didnt work anymore. I still have my TI-994A (from the same era as the commodore) up in my attic somewhere. Never thought those old computers could be useful.

Steam and creosote in masterbuilt cold/slow smoker

I used to used the cold/slow smoking attachment on my old MES30. I wore 3 or 4 of them out. The ones purchased a long time ago were painted on the inside, the newer ones did not. It did not really bother me because the insides would eventually get coated with smoke residue, so paint in my...
