Where to find the right racks...

I managed to make delicious salmon jerky -  the recipe called for hanging the salmon from the rack - looks like a regular oven rack (forget what smoker they had) however - my WSM 18.5 rack is too small between the rods so, I improvised and used a grilling basket It worked fine and the...

    Help with ribs, please.

I just got my smoker and did two racks - stock thermo read 225 - 250 on a 95 degree day sitting in the blistering sun. I used a water bowl in my smoker. I think mine ended up going 4.5 hours total time. Didn't foil or remove from smoker. At the 3 hour mark - I sprayed dr. p on the ribs every...

Cleaning up your act - clean smoke is delicious smoke!

@Mr T 59874 - do you think I would need a blower fan on the mailbox to get the smoke up around and down 20' of piping? I fear the smoke would build in the pipe and just sit there...

Cleaning up your act - clean smoke is delicious smoke!

@Hoity Toit: I here you. Now that I have my smoker I'm all about getting it to run to perfection. I like the basic floor model and it does a good job for what I would assume the masses use it for - but I am looking to expand my WSM to be a cold smoker too. I'm not a metal fabricator so I'll have...

    Hooked

I was surprised when I saw it and the reason they gave under the danger section: "Lining the bowl with aluminum foil will obstruct the air flow." I can't imagine losing a 1/16" around the edge is going to have an impact. I also agree that having a higher humidity/moisture content in the smoker...

    Smoke flavor on leftovers...

That is what I was thinking - that I was just accustomed to the smoke smell and didn't get the same taste early on and much like a good soup - always better on day 2. Maybe the chicken was just a little more enhanced because it had more moisture to draw more of the smoke through the meat...

    Smoke flavor on leftovers...

Hey Guys, Super new to smoking - only 1 weekend under my belt. I've done 2 racks of ribs and 2 whole chickens (made 2 because I love cold chicken) The chickens were very tame and mild smokey flavor when we ate them hot (was disappointed to say the least), however, when I got into the chicken...

    Hooked

Thanks guys! I'm really excited to continue the journey and the delicious treats along the way. I'm glad I'm not a metal fabricator as I could see myself spending all of my weekends smoking and also making smokers or tweaking my WSM. I ordered a gasket kit for the leaks - we'll see how that...

    New WSM - Minnesota

Wife got me the weber smokey mountain 18 for fathers day - managed 2 racks of ribs and 2 whole chickens over the weekend and I'm hooked. Surprised the WSM had as good of reviews as it does... it seems incredibly functional but doesn't seem that well built. Already ordered gaskets and a...

    Hooked

new smoker here - wife got me the WSM 18 for father's day. I've only smoked using a large smokehouse on a couple of occasions. Had my smoker for less than a week and have done 2 whole chickens and 2 racks of ribs already!!! WSM leaks pretty bad and the construction isn't the best... really...
