Was not like tenderloin but had nice flavor. Sliced thin for tacos. Next time will start SV first thing in the morning. Two tasty to add im my venison grinding.
Your NW of me a few miles but not sure what store GFS is. Doing like you suggested and have in Mexican seasoned marinade at 131 temp in SV. Only going to be able to soak about 5 hours. Will see if raining tonight weather grill or using cast iron to sear. Thanks
Last packer I trimmed out had a part of flat about 1/2" thick. I trimmed off weighing about 14 oz. thinking could cook like flank steak for tacos. Now Im wondering if it would be to tuff even sliced thin. What do you guys suggest.
I prefer saving my brisket trimmings for grinding venison. Dont make me feel bad about paying for all that fat on a packer. Here in STL pork butts are selling for $1.89 LB. The good old days of .89 cents a LB are gone.
I had a CC sear pit I had mounted to side of my pellet smoker. Refuse to put one more penny into it and started using the sear option on my pellet grill. Goes up to 650 and with fatty meat I can get flame ups to help with a sear. Leaner steak and venison I use melted butter for flame action. The...
Tongue is one of the finest cuts of beef. Cant tell you how many times iv heard of people buying a 1/2 side of beef and either throwing it away or giving to me. Trying to tell them how good it is waste my time.
I do it all the time with venison harts. They cure fast weather using quick tender or injectable cure. The only thing I found is going light on rub before putting in smoker. Think because lean mussel it can be over powering. IT 135 and makes great reubens. Would love seeing pictures of finished...
Im surprised you would even consider buying another CC product. Bought a used Memphis years ago and love it. Dont know what my next pellet machine would be but CC is not getting any of my $.
Game plan was to make some brats after finished processing venison. What the heck, grinder is out and dirty. I bought a used #22 Wesson that came with many different tubes for filling but did not verify having correct diameter. I know you pros use a stuffer but I was going to do like how we fill...
The oven I replace would be up to 400 in less than 5 min. The new one takes 20+min to reach 400. Called to complain and was told ovens with concealed heating elements take longer to heat. Now I dont use it 1/2 as much because its so inconvenient. Now that I think about it, that does make it...
My bitch is spent a lot of money on the All Clad HA1 non stick and 4 times slower than $20 CI pan. This is a expensive Jenn Air glass top and its not a element going out because all four burners are crap. Good luck trying to boil two gallons of water. Brian im glad to hear someone else...
Have horrible inefficient, uneven heat transfer with glass electric stove. Thought cheap pans that are not flat when hot. Bought All clad d5 pan in stainless and made big difference. Stainless is difficult for me to use with limited use application so purchased All clad HA1 anodized non stick...
I had that problem with not being cured all the way through and controlling salt content. Look up daveomak post on injectable curing. He works off meat weight so easy to control salt content and because its injectable can have any thickness meat ready for smoker in couple days and perfect every...
