    Gonna be yummy for sure.  I've read up on Chef JJ's Au Jus and it's on my smokey goodness list of thing to try.  ( I'm falling behind because the list keeps growing ) Thanks Tropics.  It's easy to do when I have this great forum as a resource.

    Roast beef is done.  I pulled it at 137 and will refrigerate until tomorrow. Poppers are ready to go on.  I ran out of prosciutto and used Bearcarver's Canadian bacon to finish the rest of them.
