just a thought- but maybe its gettin wedged somehow on some small pieces of wood or charcoal. good set of gloves would be useful to put a little extra muscle into it. just a thought
just as a note- i put crab boil in with some beer once and it gave off a slight creole taste. but creole chicken? they really dont go together. its an idea tho.
not as thin as i would have liked. yet, not billowing. possibly bad wood? my girlfriend ate some of the chicken and liked it. im my biggest critic, maybe its just me.
i did 2 beer butt chickens this weekend and used cherry wood that i got off of ebay. i guess it is the wood, cause i did not care for the chicken. made a sandwich, didnt like it. made some soup, didnt like it. chalk one up for the learning curve.

i have a chargriller smoking pro with side firebox. the upside of this smoker is it has a "drawer like "quality that allows you to just dump out the ash instead of digging it out like the brinkman. also, the main pit has level adjustments to raise/lower flames. i like it!!! take a look...
im gonna say that the best solution to this problem is to KNOW that the wasps are going to be in the smoker and allow extra time to get them out. that is what im planning. i can foresee this being a problem of mine. u definitely dont want to spray your smoker, unless its with a water hose...
i cant believe its ready already. still cooking mine. i had a lot of time with the temp between 180-200 tho. i plan on leaving mine on for a full 12 hrs. one question. what will wrappin it and putting it in a cooler accomplish?
sounds like your head should be in washington. i live in an apartment and must transport my smoker everytime i use it. i cant keep it here. its to big for this little place. mines just sittin in the rain. i thought about getting some sort of canopy for it, but i have no way to anchor it. so...
yea, had it on an hour now. im soaking wet, but my temp is holdin at 210*. rains gonna clear out in about another hour. just about got some hail here, got kinda nasty. but its nice in the chamber.
