Need some help, Homecoming Tailgate and wondering what I should smoke

I bought a few pounds of sausage to smoke, and some beans to smoke in their own trays. Maybe I will go with bacon wrapped boneless chicken thighs with ham and cheese inside. I have grilled these in the past and they have tasted great.

Need some help, Homecoming Tailgate and wondering what I should smoke

going with a pork butt. My only concern is time. The game is at 2:00 p.m., with an hour and a half drive to Fort Collins from Denver. A good tailgate has to be about 4 hours long, which means we need to leave by 9:00 a.m. If I start the butt at 11:00 p.m., will it be ready by 8:00 a.m.? I...

First tailgate of the season, smoking my first fatty and a rack of ribs

I will post a q-view of the ribs, which were amazing.  The best ribs I have ever made.  3 hours with just dry rub, 2 hours in foil with butter, honey, and beer, then an hour with sauce, and 30 minutes on low direct heat on the grill.  They were amazing. The fatty actually tasted better after...

First tailgate of the season, smoking my first fatty and a rack of ribs

I have been wanting to try a fatty since the first time I saw one so I thought no better time to start than Colorado State's home opener.  Go Rams! I went with cheap bacon as suggested in many posts here, and used a package of skinned beer brats and cut up some marble cheddar for my fatty.  I...
